Rustic Tuscan-Parmesan Croutons
Making croutons from scratch is always better and also a great way to use the 'less-than-fresh' bread you have lying around! Also, you can make them whatever size and crispness you want!
Ingredients
4 C ‘crusty’ bread cubes (cut to about 1/2")
1/4 C NOOC Tuscan Herb Olive Oil
1/4 C grated parmesan cheese (the finer the better, it will stick to the bread better!) Seasoning to taste – pepper & sea salt or whatever salt blend you prefer
Directions
Preheat oven to 350 F. Blend all ingredients except bread cubes in a large bowl. Add bread cubes and toss well by stirring and "squishing" with a large spoon to sponge up the oil and cheese until it’s all stuck to the bread (you may need to get your hands in there!) Empty bread onto baking sheet or cake pan and spread evenly. Bake anywhere between 10-20 mins depending on how crispy or browned you like your croutons. Be sure to cool completely before serving.
