Our Traditional 18 Year Aged Balsamic Condimento from Modena, Italy is one of the finest expressions of authentic balsamic craftsmanship. This exquisite balsamic is produced following the time-honoured Solera System, a traditional aging method where the balsamic is transferred through a series of progressively smaller barrels made from different types of wood—chestnut, oak, mulberry, and ash. Each wood contributes unique flavour notes, allowing the balsamic to develop its deep, rich complexity over time. The result is a meticulously aged product with layers of flavour that are both bold and balanced.
Boasting an exceptionally high natural density of 1.28+ and an average acidity of 4%, this balsamic surpasses even the prestigious Four Leaf Quality standard. Unlike many commercial varieties, our balsamic condimento is created without the use of thickeners, caramel, or added sugars. Its unparalleled thickness comes from the traditional cooking process in copper kettles and the extended aging period, which allows the natural sugars in the grapes to concentrate, creating a luxurious mouthfeel and intense flavour profile.
