Spicy Calabrian Red Pepper & Feta Dip
Roasted red pepper and feta come together to create an amazing dip for veggies, crackers or warm naan bread! It is rich in flavour and features our Spicy Calabrian Pesto Olive Oil. A fresh Thai red chili adds a nice spicy kick but feel free to omit if you're not a fan of the HEAT! Try it as a sandwich spread or use as a dip for our Spicy Calabrian Polenta Fries!

2 roasted red peppers, peeled & seeded
1 fresh Thai red chili (optional)
1 1/2 c crumbled feta cheese
1 tsp fresh lemon juice (a squeeze)
Fresh ground pepper, to taste
PLACE garlic, Thai red chili, roasted peppers and Spicy Calabrian Pesto Olive Oil in a small food processor and pulse until garlic is finely minced and blended with the other ingredients.
ADD crumbled feta, pepper & lemon juice and blend until JUST combined (*DO NOT OVER-BLEND, it will cause it to be too 'liquidy')
Refrigerate in a sealed container for up to a week.
