Roasted red pepper and feta come together to create an amazing dip for veggies, crackers, or warm naan bread! It is rich in flavour and features our Spicy Calabrian Pesto Olive Oil. A fresh Thai red chilli adds a nice spicy kick, but feel free to omit if you're not a fan of the heat! Try it as a sandwich spread or use it as a dip for our Spicy Calabrian Polenta Fries.

Ingredients

2 tbsp Spicy Calabrian Pesto Olive Oil
2 Roasted Red Peppers (peeled and seeded)
1 Clove Garlic
1 fresh Thai Red Chili (optional)
1 1/2 cups Feta Cheese (crumbled)
1 tsp Fresh Lemon Juice (a squeeze)
Fresh ground pepper, to taste

Directions

Place garlic, Thai red chili, roasted peppers, and Spicy Calabrian Pesto Olive Oil in a small food processor and pulse until garlic is finely minced and blended with the other ingredients.
Add crumbled feta, pepper, and lemon juice and blend until just combined. Do not over-blend, as it will cause the dip to become too liquidy.
Refrigerate in a sealed container for up to a week.
