Easy and flavourful! I like to cook up a whole bunch of this chicken to have on hand for salads for mid week salad and pasta dishes! You don't have to butterfly the chicken but I find the more surface area to soak up the marinade the better! Plus they cook faster and more evenly. Butterfly the chicken. Place the chicken breast on the cutting board with what would have been the skin side down. Place one hand on the chicken breast, curving your fingers up slightly for safety. Insert the knife into the middle of the thickest part and cut horizontally; cut almost to the other side. Open it like a book.
Season the chicken with salt and pepper on both sides
Mix together the Spicy Calabrian Pesto Olive Oil & Traditional Balsamic in a small bowl and use a silicone basting brush to coat every surface of the chicken. This can go straight on the bbq at this point or sit at room temperature for up to 2 hrs (or refrigerate in a sealed container for up to 3 days)
Grill chicken for 5-7 mins per side or until just fully cooked through (165F internal temperature)
