A tender, slow-cooked beef roast, rubbed with a fragrant blend of herbs and spices, and cooked on a bed of onions and vegetables. This recipe uses our Ultra Premium Olive Oil to enhance the flavour of both the roast and the vegetables, making it a perfect comfort meal.
For the dry rub, mix garlic powder, paprika, salt, pepper, thyme, and oregano, then rub it all over the beef roast.
Preheat the oven to 350°F (175°C) and heat an oven-safe pot in the oven for 10 minutes.
Add olive oil to the pot, sear the beef on all sides until browned, then remove it from the pot.
Place thick onion slices in the pot, set the beef on top, cover the pot, and roast for 2.5 to 3 hours.
With 1 hour left, add carrots and potatoes around the beef, then roast until the beef is tender. Let the beef rest for 10 minutes, then serve with the vegetables and onions.
