A fresh, light and slightly spicy salad that can be used as a side, or make it a light meal by adding sliced grilled chicken. Pairs great with Thai or Vietnamese main dishes!
2 tbsp NOOC Kaimana Lychee White Balsamic
2 tbsp NOOC Basil Infused Olive Oil
1 Thai red chili, seeded and finely minced (optional)
1 tbsp fresh squeezed lime juice
Salt & Pepper to taste
1 head butter lettuce, torn into small pieces (or ¼ of head of green or savoy cabbage, finely shredded)
1 English cucumber, sliced thin (or one bag mini cucumbers)
1/4 cup green onions, sliced thin
2-3 red radishes, sliced paper thin
1/4 cup fresh cilantro, chopped
Place first 4 ingredients plus a dash of salt and pepper in a small jar and shake well.
Place all other ingredients in a bowl and toss with dressing.
*add some grilled, sliced chicken breast if desired
